Quiche

Another French dish recipe! The classic recipe is the quiche Lorraine, with bacon, but actually, you can add whatever ingredients you want. It can be served warm or cold, with salad as a side dish. I will give you the ingredients for the quiche Lorraine, and a vegetarian quiche.

Chocolate chip cookies

Ingredients:

  • 150 g brown sugar
  • 180 g wheat flour
  • 125 g soft butter
  • 1 egg
  • 2 tbsp almond powder
  • 1 tsp vanilla essence
  • 100 g chocolate chips
  • 10 g baking powder

Directions:

  1. Preheat the oven to 200°C.
  2. In a medium-sized bowl, mix butter and sugar.
  3. Add the flour, the baking powder, the almond powder, the vanilla essence and the egg. Mix until you obtain a homogeneous dough.
  4. Add the chocolate chips. Mix.
5. Drop cookie dough in ~4cm diameter balls on a sheet pan covered with bakery paper.

6. Bake during 8-12 min in the oven.

7. Let cookies cool on a wire rack.

Lemon cake

Ingredients:

  • 120 g of sugar
  • 80 g of wheat flour
  • 100 g of melted butter
  • 4 eggs
  • 10 g of baking powder
  • 1 lemon
  • 40 g of almond powder

Directions:

  1. Preheat the oven to 180°C.
  2. Grate the lemon to get the zest.
  3. In a bowl, mix the eggs with the sugar until it gets foamy.
  4. Add the butter, the flour and the baking powder until you obtain a smooth batter.
  5. Add the almond powder and the zest. Gently stir.
  6. Butter the cake mold.
  7. Pour the batter into the mold, and bake during 30-40 minutes (check for doneness using a toothpick).

Decoration ideas:

  • Sprinkle with slivered almonds before baking, or
  • Once the cake is cooled, spread some icing one the top of the cake (use lemon juice and icing sugar for the icing).

Muffins

Here is the very simple muffin recipe. Follow the instructions to make the basic batter, and check the “variations” to try different muffin flavors.

Ingredients:

  • 200 g of wheat flour
  • 125 g of sugar
  • 10 g of baking powder
  • 200 mL of single cream
  • 20 mL of milk
  • 75 g of melted butter
  • 1 egg
  • a pinch of salt

Directions:

  1. Preheat the oven to 200°C.
  2. Mix together the flour, sugar, baking powder and salt.
  3. In a small bowl, stir the egg, cream, milk and butter, pour it into the flour mixture. Mix until you obtain a smooth batter.
  4. Add the ingredients from the “variations” section, and mix gently.
  5. Pour the batter into paper muffins cups, and bake for 15 to 20 min.

Variations:

  • Chocolate and vanilla muffins: 100 g of chocolate chips, 2 tbsp almond powder and 1 tsp vanilla essence.
  • Raspberries muffins: 150 g of frozen raspberries, 2 tbsp almond powder.
  • Double chocolate muffins: 100 g of melted dark chocolate, mix. Add 100 g of chocolate chips.
  • Cranberries muffins: 100 g of frozen cranberries, 2 tbsp almond powder, 1 tsp nutmeg powder.

Decoration ideas: before baking, sprinkle the muffins with slivered almonds, colored sugar pearls…

Advice: check if muffins are baked using a toothpick.  Insert it in the middle of the muffins, and pull it out. If some batter sticks to it, your muffins are not baked: when muffins are ready, there won’t be any wet batter on the toothpick

Crepes

Crêpes are a type of very thin pancakes. They originate from Brittany, in France. Here are the recipe for the batter, and some ideas for fillings (which can be savory dish or sweet).

Ingredients:

  • 3 eggs
  • 33 cl of milk at room temperature
  • 125 g of wheat flour
  • 10 g of melted butter
  • 5 cl of water

Directions:

  1. Combine in a medium bowl: the eggs, the flour, the milk and the butter. Mix until you obtain a smooth batter.
  2. Set aside for 30 minutes.
  3. Add the water, and mix gently with a ladle.

Preparation:

In a hot frying pan with trace of butter on the surface, pour enough batter to cover the whole pan. Cook on medium heat until the edges turn golden brown. Flip with a large spatula, and cook until the other side turns brown.

Fillings:

  • Savory dish: ham, bacon, mushrooms, fried egg, cheese…
  • Sweet: butter and sugar, jam, chocolate, ice cream…
