Just beware the dough has to rest. Let’s say that preparation time is approx. 1h30

Ingredients

  • 500g flour (works with the most basic flour. You can use whole-wheat flour as well)
  • 300g water (actually, I recommend 200g milk and 100g water for a fluffier bread)
  • 2tbsp olive oil
  • 1.5tsp salt
  • 0.5tsp sugar
  • 5 to 10g active dry yeast (it will depend on whether if you will prepare the dough manually 10g or with a bread making machine 5g)

Directions
Step 1: preparing the dough

A. If you use a bread maker

    • Add the ingredients in the following order
    1. water (or water + warm milk)
    2. oil
    3. salt
    4. sugar
    5. flour
    6. yeast
    • Launch the “dough” program (don’t bake this in the machine, it will ruin the bread. Just prepare the dough and bake it in the oven. See step 2)

B. If you’re brave and will prepare the dough with your precious hands

    • In a large bowl, mix together flour and salt
    • Add the dry yeast to the warm water (or the warm “water + milk” mix). Pour it into the bowl and mix until you get a smooth dough
    • Dust a plate with flour, put the dough on it. Cover with a cloth
    • Let it rest for 30min in a warm place
    • On a floured counter top, knead the dough. Separate in halves and make two balls
    • Place the dough balls on an oiled baking sheet (I use olive oil)
    • cover them with a clean bowl that you turned upside down, let it rest for 40min tops

Step 2: baking the dough

  • On a floured counter top, knead the dough. Separate in halves and make two balls
  • Place the dough balls on an oiled baking sheet (I use olive oil)
  • cover them with a clean bowl that you turned upside down, let it rest for 40min tops
  • Preheat the oven to 240°C
  • Put the dough on a baking foil
  • Scar the dough with a knife
  • Dust the dough with flour
  • Bake for 30/35min or until the crust turns golden brown

Tips:

  • If you bake the bread with a ramekin filled with water, the crust will be more crispy!
  • You can add ingredients to the dough. I tried with chopped olives, chopped nuts and raisins, chopped bacon… It’s endless. Just be creative!
  • I also usually dust the bread with flour and thyme, to me it’s tastier this way.
