Here is the easiest almond cookie recipe. The only difficulty is to carefully check the baking time. do you think you’ll handle that?
- 200g shredded almonds
- 200g sugar
- 50g flour
- 2 eggs
- 2 egg whites
- 50g melted butter
- vanilla extract
Preheat oven to 220°C
In a large bowl, mix together: almonds, sugar, flour
In a separate bowl, mix all the eggs + egg whites. Add to the first mix
Add the vanilla and melted butter and gently mix together
Let the batter rest for 30 min
Put the equivalent of a big teaspoon per cookie, and lay the batter on a baking sheet
Bake during 7min in the oven, or until the edges turn golden brown.
Let it cool over a rolling-pin.
Just be careful, because the crunchy cookie can easily turn into something chewy. The best is to store them in a box.
