Soft ginger cookies

Last friday night, we went out of cookies, so I baked those soft ginger cookies – until 1.30 am, yes: that’s what I can do when I really want a cookie…! And they were so good, I have to share it with you! I adapted the recipe I found on Joy of Baking with the ingredients I had home. Here it is just for you!

Matcha tea cookies

One month without new recipe. Sorry for that: new job, new lifestyle. I needed a bit of time to get used to it… And since Tiago, my photographer is enjoying the Erasmus experience and is far away from me, I had to find a kind soul who would agree to take some pictures (done. Thanks to Edouard). So here I am now, with green tea cookies recipe. Do not be scared by their extraterrestrial color: they taste really good!

Chocolate chip cookies


  • 150 g brown sugar
  • 180 g wheat flour
  • 125 g soft butter
  • 1 egg
  • 2 tbsp almond powder
  • 1 tsp vanilla essence
  • 100 g chocolate chips
  • 10 g baking powder


  1. Preheat the oven to 200°C.
  2. In a medium-sized bowl, mix butter and sugar.
  3. Add the flour, the baking powder, the almond powder, the vanilla essence and the egg. Mix until you obtain a homogeneous dough.
  4. Add the chocolate chips. Mix.
5. Drop cookie dough in ~4cm diameter balls on a sheet pan covered with bakery paper.

6. Bake during 8-12 min in the oven.

7. Let cookies cool on a wire rack.
